You can enjoy several kinds of Miso ramen here! This is the only place you can choose the kinds of MISO. The places where “AKA MISO” and “SHIRO MISO” are eaten are divided according to the area, so it is rare to be able to eat every type of MISO!

1. AKA MISO ramen

First of all, MISO is a traditional fermented soybean paste for soup.
The difference between 1 and 2 is the way of making. “AKA MISO” is made by steamed soybeans, while “SHIRO MISO” is made by boiled soybeans. The reason why the color changes is that the color changes due to the “Maillard reaction” that occurs during the fermentation stages. As of the taste, “AKA MISO” is more salty and “SHIRO MISO” has a milder taste.
Some of you know “AKA” in Japanese means “red” in English, but actually the color of “AKA MISO” soup is brown color rather than red. the same thing can be said with “SHIRO MISO”. Please enjoy the gap of what is called and actual color.:)

As for me, I ate and love “AKA MISO ramen” because “AKA MISO” is one of the famous food in my hometown “Okazaki” in Aichi Prefecture.
